How to Make Kofta Curry Step By Step Recipe

Step 1: Prepare the Kofta Mixture
Take 1.5 kg beef mince and add 200 grams onion, 100 grams green chilies, 25 grams ginger, and 25 grams garlic.
Pass the beef mince through the meat grinder twice. The vegetables only need to be ground once.
Transfer the ground mixture to a bowl and add 1 tablespoon salt, 1 tablespoon red chili powder, 1 tablespoon black pepper powder, and 1 tablespoon cumin powder.
Now add 5 tablespoons gram flour (besan) and mix everything very well.
Add 2 eggs and mix the mixture again until all the ingredients are thoroughly combined.
If you prefer a spicier taste, you can slightly increase the amount of red chili, black pepper, and other spices according to your preference.

Step 2: Make the Koftas
Once the kofta mixture is ready, shape it into koftas according to your preferred size.
You can make small, medium, or large koftas depending on how you like them.
Prepare all the koftas in the same way and keep them ready.

Step 3: Fry the Koftas
Heat 250 grams (approximately 1 pao) of ghee or cooking oil in a karahi.
Carefully add all the prepared koftas to the hot ghee.
Important: Do not stir the koftas for the first 1–2 minutes. Allow them to cook and become slightly firm.
Once the koftas become firm on the outside, gently stir them with a spoon so they can cook evenly without breaking.

Step 4: Add Tomatoes, Ginger & Garlic
Take 250 grams tomatoes and grind them in a blender or grinder.
Add the ground tomatoes to the karahi along with some green chilies and a little chopped ginger and garlic.
Cook over medium heat until the water released from the tomatoes has completely evaporated.

Step 5: Add Yogurt and Spices
Once the tomato water has dried, add 100 grams yogurt.
Now add: salt, red chili powder, cumin powder, coriander powder, turmeric powder, garam masala powder, Kasuri methi.
Mix everything gently and cook over medium heat until the water from the yogurt has completely dried and the oil begins to separate.

Step 6: Final Touch
Once the yogurt water has dried, sprinkle ½ tablespoon black pepper powder over the koftas.
Finally, garnish the Beef Kofta Karahi with fresh green chilies.

Frequently Asked Questions

Can I use chicken mince instead of beef?

Grinding the mince twice helps make the koftas softer, smoother, and easier to shape.

Can I use roasted chickpeas instead of besan?
Yes. You can grind roasted chickpeas and use approximately 5 tablespoons instead of gram flour.
